We came into possession of a heap of avocados recently, and apart from making Avocado Chocolate Mousse, I also made some pasta from scratch (so easy and delicious – recipe here) and made this delicious creamy avocado sauce to go with it. Absolutely delicious, the lemon just sets it off. I can’t believe I didn’t used to like avocados! Although I still can’t just eat them on their own… maybe one day.
Ingredients:
- 1 cup avocado chunks
- 1 tbs (20mL) olive oil
- 1 tbs garlic (I used one large clove)
- 1 tbs lemon plus the zest (I used half a very very small lemon)
- 8 fresh basil leaves
- 2 tbs non-dairy milk (I used almond milk. Add more as needed to get the right consistency.)
- salt & pepper to taste
Method:
Add all ingredients to a high-speed blender, whizz until smooth, pour over pasta (wholemeal in this photo).
Super easy!!
