Have I mentioned that I love my pressure cooker? As I changed my diet and started to incorporate more beans, legumes and grains, I found my trusty pressure cooker indispensable for drastically reducing the cooking time of these notorious slow-pokes. I highly recommend checking them out – if you cook alot of beans, legume or grains, it really makes a difference to your menu plan if you know you can have dinner on the table in 30 mins rather than 2 hrs!
Anyway, on to the recipe. This potato & pea curry is such a cinch to prepare, and tastes divine served with brown rice (which only takes about 20 mins to cook in a pressure cooker!). As with all curries, it’s fabulous the next day too.
Prep time: 10 mins
Cook time: 10 mins* (in a pressure cooker – will be longer in a slow cooker or stovetop)
- 1/4 cup peanut oil, rice bran oil or almond oil (I use almond oil)
- 2 white onions, sliced
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1/2 tsp chilli powder
- 2 cloves garlic, crushed
- 1/2 tsp grated ginger
- 1/4 cup tomato paste
- 3 large potatoes, cut into 2-3 cm cubes
- 2 cups frozen peas, thawed
- 1/2 cup boiling water
- 1 tsp garam masala
- 1/4 cup fresh corander, chopped
Heat the oil in the pressure cooker over medium heat then fry the onion and cumin seeds for 2 mins until golden. Stir in the turmeric, chilli powder, garlic and ginger and cook for 10 secs, then add the tomato paste, potatoes and peas. Stir well and season to taste with salt.
Add the boiling water then close the lid and lock it. Bring the cooker to low pressure ovr high heat. Once low pressure has been reached, reduce the heat to stabilise pressure and cook for 6 mins. Release the pressure using the natural-release method, unlock and remove the lid. Stir through the garam masala and coriander.
*Note: If you don’t have a pressure cooker, I would expect that the recipe would be the same on a stovetop or slow cooker, but obviously the cooking time would be longer. If you try it this way, please let me know your cooking time, and I’ll update this recipe 🙂
