I had been meaning to try this one for ages, and finally got around to it last week. Can I just say – WOW!!! This is such an easy recipe, and it is absolutely delicious. It really satisfies a craving for something sweet, but because it’s good for you, you don’t need to feel guilty about going back for a second piece (or a third piece, as the case may be…)
Note: My fudge has wrinkles on the top because I lined my container with foil before pressing the fudge into it, to make it easier to get out.
Ingredients:
- 1 cup pitted dates (I used medjool)
- 1 cup raw macadamias
Method:
- Blend dates and macadamias together in a high-speed blender or food processor until smooth (I used a blender so not sure how it turns out in a food processor). Don’t worry, it’s super-easy to clean your blender afterwards as the fudge just kind of falls out in one blob.
- Press into a shallow container and freeze until firm (4-6 hrs), then cut into squares and try not to eat the whole lot at once.
