As far as a healthy chocolatey dessert goes, this is pretty good. As far as a decadent chocolatey dessert goes, I prefer the Avocado Chocolate Mousse. Still, give this one a whirl, you might love it. It’s probably even un-rich enough to have as a breakfast pudding, if you really want.
- 1/4 cup black or white whole chia seeds (I used white)
- 1 1/4 cup unsweetened almond milk
- 1/4 tsp vanilla extract
- 2 tbs + 1 tsp cacao powder
- 3 tsp xylitol
Blend all ingredients in a blender, pour into serving bowls and refrigerate for a few hours (or overnight). Eat cold or warmed (I haven’t tried warmed).
